A tourist trap is something that was created for tourists and locals generally avoid. There are lots of popular & scenic places to stop on Hwy 1 that are appealing to tourists AND to locals. But you want to avoid these best places? If this is your only opportunity to drive along the Central Coast, I'd recommend you stop at some of the beautiful places that are also the "best places."

It is a long drive so you won't have time to see much leave alone tourist traps. Which of those scenic spots and state parks did you feel were tourist traps? The only area I would avoid would be the shops in Cannery row in Monterey but other than that I don't think you are in danger of hitting tourist traps

Sounds like you want a beach tucked away, not too busy. Pfeiffer Beach is hard to get to (at the end of a narrow road) but so many people have heard of it that it could be busy as it is close to Carmel.

Several other options: Sand Dollar Beach is the largest beach in Big Sur and requires a short walk down from the bluffs. So you can take photos of the beach from above and also from below. That might work for you. pinterest.com/search/pins/…

But none of the beaches are "overrun" with people that I know of.

Just an FYI....

SF to SLO via Highway 1 is a 6 1/2 hour drive WITHOUT stops

You really won't have time for the major sights: Santa Cruz, Monterey, Carmel, Point Lobos. Plus getting out of SF on a Saturday will put you in some hellacious traffic. I know. Happened to me on a Saturday in October a few years ago.

Some of the brief stops you can make include:

Bixby Bridge (Yes, it's busy there, but this is an iconic bridge spanning a deep gorge that was thought impossible to build. It's worth a photo op)

Garrapata State Park (It isn't signed very well, if even. Look for the line of trees with all the cars parked along the side of the highway and look for the trails down to the beach)

Pfeiffer Beach (The road isn't marked, but isn't that hard to find. The first right turn after driving over the road level Big Sur River Bridge with the sign discouraging RV's is the turn. It's a winding, narrow road, but the purple sand and rock arches standing in the ocean are well worth the detour)

Nepenthe for lunch (Another tourist mecca, but, again, worth the stop! Beautiful views of the Big Sur coastline)

McWay Falls @ Julia Pfeiffer Burns State Park (Famous ribbon waterfall that drops on to an inaccessible beach. You don't have to enter the park to enjoy the view. You can park right off the highway and look over the fence line. You'll see the turn out after passing the sign indicating the turn into the park 1/4 mile ahead)

Elephant Seal Rookery (Again, a busy place, but one of just a few areas along the coast where the huge elephant seals bask on the beach)

San Simeon Point (The turn off is across the street from the Hearst Castle entrance)

Also, I just want to make sure you understand the beaches will be great for photo-taking and strolling, but if your idea of lounging includes warm weather and sun-bathing, you'll be disappointed.

Where have they scheduled you to spend the night in San Luis Obispo? It's a nice College town, but with mostly motels. Pismo Beach might have been a better location.
