I'd spend July 4th in Las Vegas, but I hope you have your room already.
Couchsurfing or airbnb is the plan.
If I'm right then I'm going to say "neither." If you're trying to get a sense of Independence Day in the US then small towns do a better job than big cities. There will be a parade, maybe a big picnic around the town square, perhaps the county fair and then fireworks. Big cities aren't much more than the obligatory evening fireworks shows.

If I did stay in a big city it would be with a family via couchsurfing or airbnb. By staying with locals I thought that would give us a proper local experience.

Not really, especially in Las Vegas.
If your goal is to experience July 4th through a local's eyes then I wouldn't be in Las Vegas, that would be to party on July 4th and experience great fireworks.
What about WIlliams or Flagstaff near the canyon?
Flagstaff could be nice, Williams is probably too small.
