A lot depends on the weather. Vegas is actually pretty fascinating with all the free attractions in front of casinos on the strip. There's a fabulous roller coaster in Primm, right on the California/Nevada state line. If you have the time, it would be worth the hour detour to visit Bryce Canyon National Park. Seeing redrock and snow is gorgeous.
One driving note, traffic on I-15 through the Mojave desert from Barstow to Vegas can be horrific, especially driving on a Friday or heading into a holiday period. Keep this in mind with your trip planning.

Snow Canyon SP near St. George would be a fun place to check out for a couple of hours. Zion NP is about 45 minutes from I-15 and would be well worth a drive through as well. It depends on how much time you have to burn on the drive.
