The "Northeast Kingdom" is the least developed part of the state. It is for the most part, quiet and beautiful. There is a website www.travelthekingdom.com which covers this large area.
For hiking, a Burlington based non-profit, Local Motion, has an online trail finder map, although not comprehensive, does provide a lot of options. www.localmotion.org.
If you are coming towards the end of September, when changing foliage color begins, you will want to have hotel reservations well in advance( Like, now!), especially for weekend nights.

Montgomery is a beautiful little town in northern Vermont. Nearby hiking. Plenty to do there, if you like a slow pace. Check out the Montgomery House -- it's a very nice inn in Montgomery.
Also check out the green mountain club website for great hikes in Vermont --

You have pretty much described Northern Vt (for that matter most of VT) www.vtstateparks.com/htm/nature_wildlife.htm
