It's hard to make a recommendation not knowing exactly what you are looking for, but I had a very pleasant and quiet weekend at the Americinn in Monroe a few years ago. http://www.americinn.com/hotels/WI/Monroe

Monroe is great, lots of cheese! Nearby is Mount Horeb (Cave of the Mounds and Little Norway) and New Glarus which we really loved www.chaletlandhaus.com for lodging. The swiss dining and architecture around town are worth a stop. Add to it New Glarus Brewing (self guided tours and it's a new facility looked atop a hill--very nice). There's pretty scenery and lots of trails around to walk/bike.

More details would help guide us in giving you some further direction as far as specifics to what you're looking for.

Look at Mineral Point as well. Are you interested in folkdancing or culture check out Folklore Village in Dodgeville.

Also, Spring Green for F.L.Wright and if the season, summer theatre at A.P.T.

Lake Geneva is great. Geneva Inn is elegant, a tad pricey with spectacular lake views. As others have said Southern WI is big, a little more specific might help.
