To get the whole package you are looking for, I would recommend visiting me where I live. . . California's Antelope Valley in northern Los Angeles County and eastern Kern County. At Jawbone Canyon south and west of Red Rock Canyon State Park (north of Mojave) there are jeep trails which many locals and out of towners recreate at. Between Mojave and the near ghost towns of Randsburg and Johannesburg lies California City, which is a mecca of jeeping and off roading. It's all do it yourself, though. If you really want a guide, I'm sure one could be had. . . I'd contact the Mojave Chamber of Commerce for starters. Need a Jeep to rent? Hunter Dodge (and Jeep) in Lancaster should be able to work something out for you.
As for horseback riding lessons, I would recommend Rainbow Ridge Ranch, which is between Palmdale and Acton. Here's your link: http://www.horsebackriding.la/ They do it all, from children to adults, and beginners to experienced. Good place to get your lessons.

One that is an area more like you are looking for is in Irvine Regional Park which is basically in Orange, not too far from Anaheim. This would be more in the wilderness than the other one. www.ctriding.com
There is "wilderness" in Orange County and there are more places with horse back riding. You can do an internet search and find more.
Hello Rootbeer Fan - Temecula can provide the solution to both of your requests. Temecula is about an hour southeast of Anaheim area and offers horseback riding through the wineries.
