Is there a reason you're choosing Costa Rica instead of a place like Mexico? Costa Rica doesn't have that many AI's--especially ones that big.

http://www.paradisus-playa-conchal.com/ is the best in the country, may I suggest you spend a few days in the Arenal/La Fortuna area too, so you can experience a little variety and see another beautiful part of Costa Rica.

With that large a group and your ample lead time, I expect you'd save beaucoup $ and get better accomodations and value by renting a complex of villas and hiring a private chef with staff. You'll have to ask others or do your own research as to specifics, but I've seen enough discussion of that option to suggest that it can be done.
