Late arrival.

Will be landing at Lihue around 7:30 pm and by the time we gather our bags and rental car I figure it will around 8:30 pm. Will be looking for a reasonable place to eat on a Saturday night.

Where are you headed? That will make a difference. Hotel? Condo? House?

Duke's Barefoot Bar about 5 mins from the airport is a popular choice, but you might be exhausted and want to just get to your hotel/condo with a quick stop at a grocery store.

Many restaurants do not stay open too late so it might be a drive through time for you if necessary.

Duke's, Kauai Pasta among others... what are you looking for and where are you headed for the night?

Our flights from the East coast are always late evening arrival. From baggage claim in LIH we'll call ahead for takeout to pickup on the way to our condo. By that point we are completely spent and just want to get checked in and situated, too exhausted from 24hrs of traveling to think about sitting down to a meal at a full service restaurant.

Hamura's is open late.

You may not be in the mood for much ...as your body clocks will be past midnight at that point.

Why don't you just make a quick stop at safeway to pickup something to eat and a bottle of wine. That is a nice way to start your vacation.

We always have a late flight at Maui and that is what we do and works out great.

Enjoy your vacation.

I agree, the flight is tough and you are usually fed twice plus we always bring along fruit, etc for healthier options. We used to go dump our luggage and run out to eat but over the years have found we too prefer just picking up something to snack on and a bottle of wine on the way to where we are staying. Then we unpack and just unwind sitting outside on our wonderful lanai. As others have said, there really are not a lot of options after 9:00 or so. If you are staying in the Poipu area i think Keoki's, Tortilla Republic (bar), Merriman's and Kalapaki Joe's are open until 9:30 or 10:00 but not sure when they quit taking food orders.
