Anything on the grill -- fresh fish, steaks (get some Maui beef), veggies ... a quick tossed salad. Eaten on the lanai with a glass of wine ... ahh ...

Will there be BBQ's at your complex? If so, fish, chicken, steak, burgers ... all quick. Some grilled veggies, a salad and roast potatoes to go with the meat.

I like to grill extra chicken breasts (boneless & marinated) and use them for other meals, e.g. for sandwiches, pasta, green salads & taco salad.

I bring some spices from home to make marinades & rubs for meat.

We loved making breakfast at our condo when we stayed at Honua Kai. Macadamia pancakes with coconut syrup and fresh mangoes and papaya make for a nice Hawaiian meal. Don't miss the Maui Gold pineapples, also! :)

Spaghetti is a quick, easy meal. You won't need to use the oven, which would further heat up the place!

Our favorite meal is the simple one! For some reason I do not mind cooking for my family on vacation because we are all so relaxed. We just bbq steaks or chicken and make a salad. Everything tastes better because you are in Maui :) Have a glass of wine and enjoy the sunshine and view. Especially after the crappy weather we have had in the Seattle area.

Pick up local fruit and take your time shopping in the markets..try something new.

We loved making a fruit salad with guava, papaya, grapes, pineapple, with sliced bananas in it each morning with greek yogurt and almonds for breakfast. (didn't want the bananas to turn color)

Chicken & beef of course, however when we are on-island, it’s the fresh fish that we gravitate to since they are unavailable at home. Quite often, restaurant portions are small ( to help preserve the species ) and the fish selections can be rather expensive.

To really enjoy Hawaii's treasures of the sea, keep it simple. Use a high smoke point oil such as Safflower, salt & pepper and one of your favorite herbs like dill weed or basil and let the wonderful flavor shine through. Most importantly, do not overcook. The low fat varieties will go from under-done to perfect to overdone in mere seconds so keep a watchful eye. Sear over high heat to pick up a touch of that smoky grill flavor, usually no more than three minutes on each side.
