It wont be a temperature thing, after all, there is such a thing as cold smoking, so its a matter of time (can be days) eg wedlinydomowe.com/meat-smoking/cold-smoking

Are you attempting to smoke your own fish in Maui?? Even if so, your enquiry would be better on a cooking forum, as I suspect few people smoke their own fish when on vacation !!

(unless I am in a minority and have no idea what I'm missing out on "what, you went to Haleakala one day, Molokini the next and then Lanai the following, whilst you could have been smoking fish? Fool ! ")

hmm . . .usually it is more a question of length of time in the smoker, not the temperature of the fish. Depends what type of fish you are smoking, and what end result you want. We smoke salmon. :)
