Friday in Fes

If Friday is a day of prayer, would there still be a market to visit? tanneries and that sort of thing?

yes.

though some stalls in the old markets close.

many stay open. As do banks.

some sites do close fridays but most are open.

as to tanneries, i recomend taking the ear plugs one uses for sleep.

and inserting one firmly into each nostral.

You'll find the medina of Fes noticeably more quiet on Friday, though some, not all, tourist shops remain open. It's an interesting contrast to see the medina when it is closed and then again on a normal market day, but to see the former without seeing the latter is certainly missing part of the reason to come to Fes.
