What is involved in the visa process is it just a tick box excercise ?

You’ll need a visa to visit Zimbabwe. You can get a visa from the Zimbabwean Embassy in London or on arrival in Zimbabwe. Most tourists use the visa on arrival service; take enough cash with you in small notes to pay for your visa at the airport. You can also apply for a visa online before travel.
Getting a visa on entry to Zimbabwe is a simple process, but it does take a long time to que. We timed it and it took on average 4 mins per person to issue a visa at Vic Falls. When you multiply that for a substantial proportion of a plane arriving from JNB. It's simply time consuming as opposed to difficult. Have the correct cash, a polite attitude (even after a long wait) and you'll have no problems at all.

Everything I have read and researched leads me to believe that US citizens can get multiple entry visa upon arrival at Victoria Falls airport. Is this correct? We will also travel to Botswana and overnight there. I understand there will be an entry fee (not sure if it is a visa). Is this correct also?

You cannot get a multiple entry visa on arrival, as a US citizen you can get a single and double entry and a Kaza visa. The Kaza visa will become null and void if you overnight in Botswana, so doesn't sound like that will work for you.
If you are just going to Zimbabwe and Botswana, I would suggest getting the double entry visa.
If you are going to Zimbabwe, Zambia and overnighting in Botswana, then I would buy a Kaza visa for the Zim / Zambia section and a single entry on your return from Botswana.
There is no visa fee for US citizens entering Botswana but they were set to introduce a $30 toursim levy, this however has been revoked and is under review, so you wont pay anything into Botswana currently. The $30 levy could be re-introduced at any time though.
