Look in the Pereybere/Grand Baie/Trou aux Biches areas in the north. It is the most touristy part of Mauritius but is still feels a smallish town or large village. Lots of local restaurants and shops for self catering. As many Mauritians are Hindus there will be plenty of vegetarian options available for you. Lots of villas for hire in the area, too.

I would also look at Pereybere/Grand baie/Trou aux Biches. You will be in the vicinity of Grand Baie that means food would not be an issue and there are plenty of vegetarian options.
