If you're in touristy you won't see much of Thai treats. Most Thai sweets or treats you will find in Thai markets especially in the morning.
The sticky rice mango it must try. However your time in Thailand is not mango season. Or if you see some mango that time of year is not the best as when you get them in season.
Kanom krok is my favorite, Kanom krok is made from rice flours with coconut cream.
Maybe you should do food tour whilst in Bangkok.
Walk around any food market in Bangkok. Eat anything that looks good. Near MBK and Pratunam there is loads of street food incl sweets.
Thank you. How would I go about booking a food tour?
Good links from Dogeririshinlondon

What hotel are you staying in?
Its true that the street food can be found all over Bangkok. But If you're not familiar with the area and serrouding it can be daunting. Expats and locals alike have plenty of time search for things but the tourist only have short time in the city. IMHO is not waste of money at all.
I'm from Thailand, speak the language and still found Bangkok to be over whelming.
Above 1-3 are sweets all of them the main ingredients are egg yoke, sugar and rice flour. # 4 is sticky rice cooked in coconut milk served with Thai egg custard.
5-6 is savory dished very popular snacks. It made from glutinous rice flour, pork mince, galic and ground peanut.
Its easy. Walk around and eat what looks good. You dont need to know any names. Lots of jelly based sweets and bread based ones.
Siam Square and Pratunam have heaps!
