If you're staying airside, do you need Baht? You can use a credit card at shops and several eating venues (though I don't recommend shopping at generally poor-value BKK airport emporia).

we do need some baht as we will be returning to Thailand from Laos and will need to have at least some thai money to get a cab before we find an ATM/forex in Udon Thani.

Why doesn't one of you just 'enter Thailand', go to the ATM's, then 'leave Thailand' again? Take your next tickets and boarding cards with you, of course.

If you are continuing from an international flight to Udon Thani, you are supposed to go through baggage claim and customs in Bangkok. suvarnabhumiairport.com/passenger_guide_tran…

The baggage claim hall has currency exchange and ATMs. Or is your plan to breeze through with only hand luggage?

Of course there will be ATMs in Udon Thani Airport, and/or in Nong Khai at the Friendship Bridge. Also I'm pretty sure you can buy baht from a money changer in Laos.
