Pho Quoc to Mekong Delta Transport & Itinerary Questions

After our transoceanic flights from the USA we have decided to fly from HCMC to spend 3-4 days in Pho Quoc to get over jet lag and get relaxed at the begining of our holiday. It seems to us that Pho Quoc will be more laid back than Mui Ne for example.

Rather than fly back to HCMC, is it possible to return by ferry and then land to spend a couple of days in the Mekong Delta before flying to Hanoi from either HCMC or another airport. We are looking for some itinerary ideas coming from Pho Quoc through the Mekong Delta as well as logistical ideas for transport, rather than flying back to HCMC, and then back tracking to the Mekong Delta.

New VA air route from Phu Quoc to Can Tho...... around 681000 VND one way. Mon, Wed, Thurs, Fri and Sun only.

That would take you right into the heart of the Mekong Delta.
