Decisions - decisions

We travelled to Vietnam 3 years ago and fell in love with the country and of course the food which has to be the best in Asia. We are thinking about a 2 week break in early May to get away from the hum drum of work and of course Vietnam was at the top of the list. Our first thoughts are to Phu Quoc island as we visited Saigon, Hoi an and Hanoi/Halong/Cat Bai last visit. Any suggestions would be appreciated - re weather in early May, (even though everyone knows it is very unpreditable)- accommodation recommendations close to restaurants outside of the hotels. . We just want to be able to enjoy relaxing, read a good book, eat at places outside of the hotel, meet some people both travellers and locals. Hope someone has some suggetions.
