Daytrip to the countryside around Phnom Penh.

We are staying in Phnom Penh for 3 nights next February. The first day we want to walk around the city to see some tourist sites like the Grand Palace (probably closed). We are not interested in the Killing Fields and the genocide museum so we think one day will be enough for the city. So the next day we would like to see some of the countryside around Phnom Penh. We would like to see some local life in the villages and on the fields. Maybe there are some interesting sights also. What will be the best way to do this? Should we take a tuk-tuk or will it be better to take a taxi or an organized tour? Which places around Phnom Penh are interesting?
