hey hana, I just spent 5 nights at Uyan Hotel very close to the all the touristic attractions of Sultanahmet in the old town. 2 minute walk to Ayasofya and Sultanahmet mosques.

The staff go out of their way to assist where possible.

I needed a large suitcase stored for 2 weeks they did it without hesitation at no extra cost

I needed to get some money changed upon arrival, a staff member walked me a few kms to the change office and then walked me back no issues

Twin share room cost us 100 lira per night. They also threw in a free one way airport transfer service which came in very handy.

Another hotel I can recommend is Erguvan Hotel where we spent 5 nights on a previous visit 2 years ago. Also very close to the main sites and good service.

Both of these properties are what I'd say 3-4 star boutique hotels on nice quiet streets.

Good luck and enjoy your stay.

I can highly recommend the Sebnem, a very nice and clean hotel in a good location

There are some more hotels in the same area, please have a look at Hanedan, Peninsula, Alp Guesthous, Alaturka, Empress Zoe, and many more. You should check the actual rates, they differ a little bit.

Could you provide a price range that works for you. That'll help people better, I think. There are lots of nice boutique hotels in Sultanahmet. Depends on what you're looking for and what you want to pay. FWIW, Istanbul isn't a cheap destination, compared to 10 years ago where everything was incredibly cheap and available. Tourism had really increased in the city and higher prices is one of the consequences.
