For how long? A day? What time of the year and where will you stay. A general suggestion - when you are in Jerusalem go to the tourist office just inside the Jaffa gate on the right and inquire.

For accommodation I will recommend either the Mamilla Hotel or the David Citadel Hotel. Both are excellent 5 stars hotels located very close to the Old City and the Christian quarter in it.

I will recommend at least 3 days in Jerusalem to cover the most of what this city has to offer.

If you are looking for a private tour than any guide, regardless of their religion is able to conduct it. If you search this forum you will find the names of many guides. Contact them and get a feel for them. Then call the ones who seem to stand out and question further. See how they respond to your questions and what feelings you get in your gut.

Realize that a guide who drives can be about $600 a day. A guide who doesn't drive --that means you have to hire a driver too. ( they will do it for you, but you pay) You also need to provide food and hotel for guides who travel overnight with you away from their homes. They usually get discounted rates for their rooms.
