You'd have time that first day to do a walk-around and suggest you go to hutong area near the Drum/Bell Towers (Houhai/Shichahai Lakes) and do just that. Two full days in Beijing isn't remotely enough. You need more time there, so take a late flight on the 10th. Remember that you'll lose at least 2 hours before departure in getting to the airport and check-in, security, etc. so don't make it too early. 1.5 days in Xi'an and you can see the essential highlights. I'm not sure why you are going to Chongqing unless you are meeting up with a Yangtze Cruise (meh), but certainly that is one city where you could minimize your time.

You won't have time to get off the beaten track. I don't really think you need a guide if you go with guidebook or printouts from internet research. A driver might be useful in two locations: 1) the Great Wall, especially if you go to any place other than Badaling (Mutianyu is better for your purposes). 2) Xi'an due to the spread of the sights you want to see vs time vs more limited subway system. But could also be done with taxis.

Taking the afternoon/night flight to Xian is fine as 1.5 days is regular length to cover the Xian main highlights. Xian Muslim Quarter with local snacks and the Great Mosque in the quarter can also be added to the itinerary besides your listed spots.

You say that this is an 11-day trip but you are only showing us 5 days from your itinerary. Not sure what you have planned for the bottom half of your trip but your stay in Beijing is way too short.
