A lot of this stuff will be old hat for seasoned travelers, but just trying to put in the details.
Before the trip : Changed my INR to HKD in India itself, though using the credit card offered very competitive rates.
During the trip: Had to change planes at BKK, suvarnabhumi has long walkways, not an issue if you have time, but can be rushed if the gap between flights is anywhere less than an hour. Suggest plan at least 90 minutes between flights os as to be comfortable.
Day 1: Landed 1145. Quick pass through immigration, no questions asked, passport swiftly stamped, 14 day visa-free period for indians, no visa fee as well.
Went to pick up octopus card at counter next to burger king in the arrival hall. It was cheaper to buy the airport express ticket separately, but i just got the octopus card as it was pretty much the same. If you buy the airport express ticket, you can pay by credit card, but cash only for octopus card, so do have some hkd. Charged for hkd 200 for each adult and hkd 170 for each kid.
took the airport express, 2nd stop kowloon. Guided to the free shuttle bus, its very convenient and well organized, no need to look for a taxi, most hotels are covered by one route or the other. Wait time, 5 min.

Watched symphony of lights from room after some time at the lounge.
Day 2: Took hotel shuttle bus to harbor city, walked across to the star ferry pier. There are separate channels for lower and upper deck, go for the upper deck (channel off to your left), the fare difference is just about a dollar (hk) and its nicer on the upper deck. Used the octopus card fro the ferry. The bus to ocean park - 629- is on the other side of the road as you get off the ferry. The direct bus runs every 20 minutes from star ferry pier from 9;45 am to 10;45 am and then every hour, so if you get there after 10:45, its better to go to admiralty and take the 629 from there, runs every few minutes.
Ocean park is huge, easily will take the whole day, get there early. Had booked tickets online, print-at-home, but thankfully did not have to cope with huge crowds, max waiting was 40 min for the cable car up. Did the summit first, don't miss the dolphins, and then came back to the water front by 5, pandas were nice, but leave enough daylight to see them or they may be resting. Symbio was very nice, i think its a must see. The grand aquarium is just that, awe-inspiring.
Day 3: Chung yeung festival , so took in the science museum and the museum of history in the morning. Spent some time in the hotel pool, evening went to sky 100, again had booked online, again no lines, went straight up. Chose the dusk slot, 5.30 pm, lots of photo ops. can pay for the telescope using the octopus card.
Had an Indian dinner at Gaylord on ashley road, TST. Then shopping at ladies market, spent a couple of hours.
Day 4: Shuttle bus again, star ferry, bus 15 c to lower tram terminus, bought a combo ticket for tram + madame Tussaud + sky peak terrace. The dedicated counter is just to the left of the station, the queue joins the usual line midway.
Taxi to ngong ping 360, had booked crystal cabin round trip online. Got there a couple of hours before the chosen slot, but no issues, were allowed on straight away, no q at all. Didi not go up the steps, strolled thru the village, back to tung chung terminus.
Taxi to disneyland hotel, checked the family in, then took MTR to hotel icon to fetch the luggage.
Disney land hotel club floor were very nice, worth it, story telling session was very animated and Minnie mouse in her PJs was just delight for the kids
Day 5: Whole day at Disney. Priority seating at one show - the first slot only - if you are a club floor guest. Park is compact, can be done in one day. But we came back after the parade, had a swim at the pool, and went back for the glow-in-the-dark parade and the fireworks, which were as spectacular as promised by reviewers here.
Note: for Indian veggies, and otherwise, Tahitian terrace at adventureland will give you choice of Indian food.
Day 6: breakfast with characters at enchanted garden, kids loved it, then off to DL again, this time focus on meet-and-greet wit the princesses, which was the highlight of the trip for the kids.
