If you don't care about having the beach - Ubud!! Lots of good restaraunts, rice paddies, great walks, good base from which to day trips, shopping.... Not much in the way of nightlife after 10.30 though. We love it.
You could also look at Lovina - there's no real beach culture there since it's a black sand beach, but nevertheless it's a nice place to stay. Very different to the usual southern Bali resorts.
If you are beach bums, then why not look at the Gilis or Lombok? Easy enough to get to from Bali. They're definately somewhere different.Edited: 25 February 2012, 13:04
Why not stay in a few different areas? it makes your trip feel a lot longer. We love to include a few nights staying on the cliff top at Bingin. It's so peaceful & the views from the cliff on sunset are spectacular.

gili islands (lombok)
Our trip (May) is:
-Lovina (Villa Lagu) one week
-Ubud (nothing booked yet) 3 nights
-Seminyak (Amadea Resort) 2 nights
-back to Lovina for another week
We love traveling around a bit, but also want to relax a lot....
