Local specialities/food worth trying in Cuzco area?

We will spend some time in Cuzco, Puno and Arequipa and we like to try local specialities.

What dish/meals would you suggest we should try or are local specialities.

We liked cuy in Huaraz area.

My favourites:

Cusco: Corn with cheese and the little tamales sold at any corner in Cusco city

Puno: Sun dried potatoes with fried cheese

Arequipa: Papaya dessert

In cusco and Arequipa or lima you can try: anticuchos, cebiche, papa rellena, rocotto rellena, lomo saltado, cuy, chicharones de cerdo con mote, corn with cheese, rice and chicken, chica morada, adobo and much more. Why not try a cooking class with wahca@hotmail.com

another of the local specialities is called CHIMORA, used for divination.
