You will want to use local currency in Israel, the New Israeli Shekel. You will get a better rate in Israel for exchanging currency into Shekels.
You can take Shekels out of ATMs in Israel too. The charges for exchange and other fees to do this you can find out from your bank. It will depend on what type of account you have with them.
The TD bank has a great account that we used when we were on holiday last where we only paid the exchange rate and no other foreign withdrawal fees.
You can take out Euros when you get to Greece. Make sure your bank knows when you will be away or they will put a stop on your card.

The info is helpful.. so just use the ATM's in the airport when we arrive ..that sounds good
Make sure your debit card works with a 4 digit PIN number.
There are some old posts on the Israel forum about debit cards and credit cards and there use in Israel on the Israel forum. Do a search and check it out.
