There would be many others but these three restaurants mention the use of home made masalas:

- OCoqueiro, Porvorim, near Panjim bridge (of Charles Sobhraj fame)

- Souza Lobo, Calangute beach, near tall sodium vapour lamp and the (in)famous 'steps'

- Martin's Corner, Betalbatim, few km north of Colva

Goan cuisine is found all over Goa, some use home made masalas, some use packaged masalas from the super market. Almost every shack and restaurant has Goan food on the menu.

If you travel during April-May, try the very light local drink Urak, distilled from the cashew flower, not found after May. Good combination with lime slices or Limca.

Forget about Souza Lobo, it has been living on past glories for many years now.

Try the Indian Handi in candolim , just past the KIngfisher VIlla.

Used by locals and tourists , great food and the tandoor starts at mid day unlike some who only fire it up for the evening trade

Mums Kitchen Panjim.

Cant remember what the guys names are now but the 2 guys who travel all over India and taste food in the restaurants its always on India Televison.They went to a shack in Goa and Mums Kitchen and rated Mums kitchen very high and the shack got rated highly for the food the served.

Yes, that's the TV series, Highway on my Plate.

I happened on a small restaurant right next to Mum's Kitchen in Miramar. I was staying at the Marriott and wanted non 5-star food. Saw a few other Marriott guests there, too. The place is called Espynick. It's not a fine dining place, but a simple, family run restaurant attached to a guest house. Very Goan. Here's my review.
