I think there are many such experiences, which people will talk about in further posts, but if you want a genuine eat in the desert experience and are a little adventurous, try Hacra, near Osian. Here you can eat in the middle of the desert with Gemar Singh. You can stay overnight in his desert homestead and sleep out under the stars. You will also look round desert villages in a very untouristy way.
Search for Hacra on this forum and you will find many recommendations.
We had dinner in the desert in Bikaner with camelman.com. I wouldn't describe it as brilliant food or service, but it was a very enjoyable evening listening to Marwari musicians, by an open fire.

If you wish to do it directly with hotels, I'll say go with reputed ones like Hotel Fort Rajwada or Gorbandh Palace at Jaisalmer......
