Also give Deviniketan http://www.deviniketan.com/ in Jaipur and Poonam Haveli in Udaipur a try. In its budget Devi Niketan is by far the best/biggest hotel in Jaipur I feel and Poonam Haveli is surprisingly cheap, but still very good.

Hope this helps

We stayed at Jagat niwas in a lake view room and loved it.

There are numerous options. However I may suggest few heritage hotels to bring back those by gone era. You may stay at Alsisar Haveli or Mandawa Haveli. Arya Niwas is another option.

Rawla Rawatsar is a wonderful homestay option. All these are at Jaipur

In udaipur you may opt for a property that is close to lake or offer lake few. Jaiwana Haveli or Jagat Niwas are few options.

Another vote for Jagat Niwas - good location, and yes; great food and view.
