Yes you are fine to give £1 coins although you can change money at the airport on arrival and the rate is much about the same wherever you change money in Tunisia

You can but I don't believe the locals can actually exchange them in banks/ shops. So sometimes they ask guests to change £ into dinar however i did the last few times, and they were more than happy :)

You can tip in British/euro coins. However, the locals will be looking for tourists leaving the country who would change the loose coins for bank notes.

For example if a local ends up with £10 tips in loose coins, he would be looking for a Brit to change them into a £10 bank note.

That's the only way they can change the tips into local dinars.

We have been tipping the odd Dinar here and there for meals etc. but can honestly say they do not seem too bothered whether you tip or not. One Waiter even said 'non' when we tried to tip him!

We've been giving the Cleaner Sweets and Chocolate and she seems over the Moon with that and decorates our room with Flowers and Towels everyday.
