If you want to stay in the Escondido area look at:

Vintana

Avant @ The Rancho Bernardo Inn

The Welk resort is removed from a lot so if you are willing to travel 45 minutes to the better areas your options will be expanded dramatically

For special occasion dining in the area, I second the recommendation for Vintana Wine + Dine. It's really nice and the food is usually quite good. Vintana also has an extensive wine list and an extensive Vodka offering. Another local Escondido location is Stone Brewing, which has a small but interesting menu with really tasty food and if you like beer, there are a lot of options.

If you want to go further afield and head towards the beaches, a personal favorite is Prep Kitchen in Del Mar. Its just amazing service and amazing food all wrapped into one. If you're looking for beach views, I've heard that Jake's Del Mar is awesome, but it's pricey and you'll want to make a reservation in advance. IN Oceanside, I've enjoyed a couple of meals and sunsets at 333 Pacific. There are SOOO many amazing restaurants in the San Diego area.
