Yes, Santa Barbara certainly comes to mind as a good option. Not sure what you might have not done when you've been to LA before, or what else if anything you might want to do in the LA area, but places / specific attractions that can be worthy of a day would include Pasadena (Norton Simon Museum, Gamble House, Hollyhoock House, Huntington Library and Gardens, Old Town Pasadena) either of the two Getty museums (Getty Center in Brentwood or Getty Villa in Pacific Palisades / Malibu), the Long Beach / San Pedro area (Queen Mary, Aquarium of the Pacific, USS Iowa museum) just to name a few things.
Visit the Getty Center in the morning. Have lunch there on the patio.
Head downtown after lunch. Stop to take a quick look at Disney Concert Hall.
Head over to the Grammy Museum at LA Live. Have dinner after at LA Live.
