You may also want to check the events calendar. There's always something going on... festivals, art shows, live music on Pearl Street all through the summer.

Just off of the Pearl Street Mall on Saturday mornings is the Boulder Farmer's Market. Great produce, locally made goods and flowers. You can also take public transportation, rent a bike and go up to see the CU campus. In the summers there are performances of Shakespeare's plays at Mary Rippon Theater on campus. http://www.coloradoshakes.org/

I just got back from a night in Boulder and my wife and I enjoyed one of the best dining experiences ever at The Kitchen, which is on or right next to Pearl Street Mall. I haven't written my review yet (coming soon) but we had reservations (highly recommended) so no wait, were served by a great, very personable waiter, and had some amazing food (Asparagus app/Lamb/sticky toffee pudding dessert).

Avery Brewing is about 2 miles East of the boulder but they have some great beer, and different styles for all tastes. Worth the short cab ride (or you can catch a cheaper bus - Jump route).

We stayed at the Briar Rose Bed and Breakfast and were extremely happy we chose them. Ended up being a short walk home after dinner.

On our way out of town we shopped Pearl Street for about 2 hours. A lot of neat places, however expect very high prices (in my opinion) on most of the non-touristy spots. Cariloha is a tee shirt shop that sells bamboo only stuff, very soft!!
