Seems like the USA Mint and State Capitol will be closed on a Federal holiday. What else can I do in Denver then? I like anything historical and hiking.

Part of it depends upon the weather. There can be a foot of snow on the ground or 60 degrees! Denver has a wonderful park system. I would recommend a fitness stroll around Washington Park (a jogger, dog walker hot-spot in SE Denver about three miles from downtown). Have lunch on nearby Pearl St or Gaylord St. If you can get into the mountains (about 60-90 minutes away I would snowshoe or rent nordic skis at one of the centers in Frisco (right over the Continental Divide.) Gorgeous. Historically i second the previous post.
The downtown library has a huge geneology session for all states and much on Western History (a whole floor of maps and prints). The Colorado History museum is worthwhile if open.
The Denver Museum of Nature and Science and the Denver Zoo are located next to eachother in City Park. Both can easily take a day for themselves, but you could always get creative and combine a Zoo trip with an early evening IMAX show at the museum.
You'll be in walking distance from the 16th Street mall, which has lots of restaurants and some neat public art. There's a free shuttle that runs every 5 min or so, and will take you from one end to the other (rtd-denver.com/FreeMallRideSchedules.shtml).
There's also the Denver Art Museum. Even if you choose not to tour the Museum, if it's a warm day you could take a walk over and check out the building and the large public art outside.
You can also make a trip to the REI store downtown. They have a rock climbing wall you can scale (complete with gear and trained professionals to help).
If you're up for a drive out of Denver, check out Estes Park. You'll be able to drive into Rocky Mountain National Park, though Trail Ridge Road is closed this time of year.

It is good regardless of weather. If we get a good snow you could rent snowshoes at the REI. Typically the trail is clear or packed down enough that you don't need them though.
