Depending on which route you take there are airboat companies along Hwy 192 just before you get to Melbourne or along Hwy 520 (If you are taking the beach line there will be an exit for 520 which will pass the airboat landing before you get to Cocoa. There is also Boggy Creek airboats near the Orlando airport.

Weather is predicting a little cloudy on Monday and rain on Tues but you never know. These forecasts can change are aren't alway accurate. Check again on Sunday for a more accurate picture. If its not real windy it will be great weather (pending no rain) for the beach as it won't be super hot. However the water temps may feel a little cooler if its really cloudy.

Doesn't look like any special surf at the beach next week. The water temperature at Cocoa Beach is currently 68, which can be tolerable on an 80 degree afternoon. Here's the daily surf zone forecast, updated 6 am.

The Orlando forum has a frequently-asked-question section on airboat rides. The last time I looked, it seemed knowledgeable. Rides inland from Cocoa and Melbourne are in the St. Johns River marshes.
