In city center, the only place I'm interested in is Twist at Mandarin Oriental.

Surrounding includes Bellagio, where I pretty much like all the dining. Prime, le Cirque, Olives, Fix, Sensi (my personal favorite).

I like Twist too and in fact am going back there next week. Also Sage in Aria is good too.

Mastro's Ocean Club in Crystals was very nice. All the restaurants in Bellagio are very good too - I particularly like Olives, for the fountain view rather than the food, provided you can get a table on the patio.
