Weekend with 8 year old

I was thinking of visiting Charlotte for a weekend with my daughter, who is eight (almost nine). What are some things you world recommend we check out?

Uptown- Discovery Place (interactive science museum), take a Segway tour of uptown, depending on interest- Levine Museum of the New South, Betchler Modern Art Museum, Gantt African American Art Museum, Mint Museum (both uptown and Randolph Road locations)

Other places- Latta Plantation, National Whitewater Center (ziplines, canoe/kayaking, etc.), Concord Mills Mall (has just added huge aquarium)

Outside Charlotte proper, but nearby- Belmont, Daniel Stowe Botanical Gardens,
