Just for the record...

having read your review of PAOLETTI'S, I just had to send a personal note to clarify an item or two.

I don't quite understand an attempt to order 'Blackened' trout at an Italian restaurant that does NOT offer Blackened anything on its menu.

Doing business in a small town where the restaurants each have their own loyal following, there is no reason to pit one establishment against another. It is quite unfair to admonish an establishment for not being able to acomodate a request for a Cajun inspired Blackened dish that a Cajun- K-Paul's made trendy some twenty or thirty years ago. PAOLETTI'S is in fact in Italian restaurant that prides itself on honest, if not simple preparations -to allow each menu items unadulterated flavors to show through. WOLFGANG'S who's chef/owner worked for the Brennan family of Commander's Palace -will gladly prepare Blackened dishes -and do it's preparation justice.
