A week is a nice amount of time to visit the area. Here's my short list of must sees:
Custer State Park
With a week, you can accomplish all of the above and then some. You should order the travel guide from travelsd.com to get a good feel for the area, and once you review it, you can pinpoint additional sites of interest.
There are many privately owned caves, museums, and natural sites that might be of interest. I'm sure you'd enjoy a drive through Spearfish Canyon also.

Are you staying in Rapid City? It’s a great central location to everything in the Hills. In Rapid, go downtown for the free City of President Statues Tour and Main Street Square for their interactive fountains going at that time. Downtown also has live music and events during the week. Check out The Journey Museum to learn more about the history of the Black Hills and/or take the City View Trolley while you’re in town.
While in the Badlands, stop by Wall Drug for a donut and view western art and photo collections! It’s the #1 roadside attraction in the world.
The scenery of the Black Hills is our best asset. Check out the 1880 Train in Hill City for a train ride, and swing by one of the wineries (Prairie Berry, Stone Faces, Naked Winery) for some of our South Dakota wine! Prairie Berry also has a lunch/dinner menu and Naked Winery also offers 52 revolving microbrews and 18 on tap.
