Get to the mountains as fast as you can and enjoy them as long as you can! That is what I would do, but if you really want to stop, do you mean for a hour or 2 or a day?

Falls Creek Falls is on the way but you have to go a hour or more off the highway and then back again.

You have Cookville, McMinnville, some other nice smaller towns along the way.

There are a lot of signs for state parks and water falls but they are NOT right off of the highway and the falls are all good hikes except Falls Creek Falls. You can drive almost right up to it once you figure out the right road. The back roads in Tennessee are not marked very well!
