We live near Waco, and enjoy the zoo, Mammoth site, and the Mayborn Museum. However, the Texas Ranger Museum is not a world-class attraction. Also, Waco is a good three hour trip from San Antonio which cuts into the "day trip" with six hours on the road (and I-35 is not exactly scenic!).
Austin may be your best choice--no baseball, but quite a bit to see and do.

Its about a 4 hour drive from San Antonio to Rangers ball park. I drove it last week... i loved the Rangers Park but im not sure if you want to do the drive or not if youre starting in San Antonio. Theres a bunch of different places to see in SA and Austin. SA's history boat tour was cheap and fun. Houston is only 2.5 hours away from SA and they have the Astros... hope that helped!
There is baseball just outside of Austin. The Round Rock Express plays at the Dell Diamond in Round Rock, which is about 20 miles north of downtown Austin. It's about an hour and a half drive from San Antonio. They are a AAA team, affiliated with the Rangers. The games are fun and the Dell Diamond is a great place to watch a game - http://www.milb.com/index.jsp?sid=t102
Round Rock (just north of Austin) has baseball at the Dell Diamond.
Round Rock Express is a minor league team with a huge fan base.
