Will I find a great artisan bakery in Carcassonne with fluffy, flaky croissants made in house?

If they're not made in house it's not a bakery.

But remember - what you think of as a great croissant may not be considered as great by the next person

Your odds are good, given that there are 14 artisan boulangeries in Carcassonne.

The pagesjaunes website lists them and provides a map locating each one. Some of them even have reviews.

A recent TV-5 Monde broadcast (documentary article), however, put the figure up closer to 70% now in 2014. (read the article first to understand that figure....)

Don't know how widespread this deception is country-wide, or if it's more of a Parisian (et environs) thing.

Even if they are cooked in house, doesn't mean the dough is made in house or made with the best ingredients - best advice, try a few and go back to the one you like best!
