I don't think anyone does escorted packages anymore; but as the above poster mentions , there are agents who will book flights and hotels and give you travel directions.
With the new Athens airport and computerized ferries lone travelers find it much easier these days.
Easyjet fly Manchester to Athens (at the moment only showing flights until end of June) and Olympic Air fly twice a day Athens to Paros; international and domestic flights use the same terminal (there is only one).

My other Greek 'destination of choice' has always been Santorini. Perissa in particular. I had considered using Santorini as a local terminal and using the ferries.

You can always go independent. Fly into Athens or Mykonos and then take a ferry to Paros (or anywhere else - Santorini). It is very easy to book ferries and find accommodation on the islands - as long as you are not travelling in the late part of July or August. Choosing a package may be easy but it is quite restricting.
