Daytime temps usually low to mid 20's. You may get overcast days and the odd bit of rain (although not normally full days). Yes everything is open as Xmas is a very busy period here plus the locals celebrate in January on 3 kings day rather than 25th!

The week around xmas from 22nd to 29th can be quite hot and sunny but there will be cloudy days also from around 15th to the end of the year. generally very nice and warm. Mid to high 70s(f).

6th Jan is three kings day, although a lot tends to happen on the afternoon of the 5th. Shop wise, its busy over the Christmas season so just about everywhere will be open as normal really! Weather wise as Rich says you get get a cloudy day or two and even the odd bit of rain but it will still be a nice pleasent temp.

We took our kids 2 years ago and the weather was great early to mid 20's every day. I wouldn't go with kids again until they were older and were no longer bothered with the whole christmas thing, it just doesn't feel right. If it was just me and the missus then I wouldn't think twice about doing it again
