The Costa Sur its close to lots of eating places and the beach, not sure why you think it looks a long way out from adeje.

No, it's about a 10-15 min walk down to the beach from the Fanabe Costa Sur so reasonably close by without being on your doorstep. There's not a lot of places directly around it but there is a couple of bars and restaurants. This may make it sound like it's a bit out the way but really, it's not, most places such as the main nightlife is along in San Eugene area. Plenty bars with live music, karaoke, comedy etc and not too far, you could walk down there in about 20/25 mins. The weekly market is also set up just behind it next to the bus stop. Taxi's are readily available just across the road from the hotel entrance and it'll take only a few minutes to get into the main areas, fares are very cheap. There is also plenty bars down by the beach and, if you want, you can walk along into Playa de las Americas from the beach road, not far.
