I have probably dined at 25-30 BiB Gourmand restaurants. None of them have been better nor more ambitious than El Xato! We had the menu degustation. Wine-food pairing were perfect the three first starters. The "Iberico-sashimi" is among my top-ten courses ever. A couple of the meat dishes were served with fantastically rich and fruity sauces. The wines served with these did not have enough body/residual sugar to match perfectly. An extraordinarily good apple and mint sorbet ended a fantastic meal.
