Bon was the first vegetarian restaurant I visited whilst in Tokyo. The food was amazing and completely vegetarian. You are given your own room with tatami mats on the floor. Each course is given to you by a friendly waitress and an explanation is given as to what you are actually eating. The food could not be replicated and I can't even begin to try. It's a bit pricey but is completely worth it.
Reservations is a must just ring before. The owner doesn't speak much English but I managed to get by with a few key words and how much I wanted to spend.
Will definitely visit again when I get the chance and I will bring more people with me next time.
