Ourselves and our two friends enjoyed dinner here on Tuesday evening. We were surprised how few people were dining and hope that they will get lots more custom - as they well deserve it.

The menu was €27.50 including wine. There was a wide range of choices for each course and each of our choices were well received.

For starters we chose: Marinaded salmon which was wonderful - both tasty and plentiful: Foie gras x 2 which was served with a small salad accompaniment and bread: and last but not last least smoked salmon served with mustard mousse and salad. All four were substantial and high quality plates with the only criticism being that the mustard mousse was a little under flavoured.

For mains two of us chose lamb. This consisted of four lamb cutlets which were cooked to preference. They were not prime cuts but tasty nonetheless. One of the others had magret de canard - this were beautiful and again, cooked to preference. Our second friend had entrecote which he requested well cooked and it arrived exactly as asked. All mains were served with a scoop of potato and one of carrot puree and a square of a very fine ratatouille.

The desserts were tempting and we succumbed again! Two of our party opted for cheese which was a perfectly ripe camenbert and a goats cheese. This was not on the menu but was willingly provided. The remaining two had icecreams and both opted not to have Chantilly cream - a token gesture towards dietary restraint.

The serving was all done by a very charming and accomplished young woman. She demonstrated with some guests that she spoke perfect English but was extremely respectful and complimentary of our efforts to speak French. She told us she also speaks at least two if not three other languages. She was very present but never obtrusive and very considerate of her clientèle. It was a pleasure to dine there and we'll be back - no doubt.

We've been visiting this restaurant on and off for several years. The main appeal is a series of set menus of local cuisine with wine included (the restaurant is associated with Sieur d'Arques, one of the biggest wineries). The menus are a little "terroir" heavy, so if you don't like Fois Gras or geziers you choice is a little limited, especially on the starters.

The chef has changed recently and the food quality is definitely better than in recent years - my duck was delicious and te pudding of lemon merangue pie was particularly excellent. The restaurant often suffers from a lack of serving staff- though those who are there are very friendly and try hard, when busy the staff are rushed off their feet, but this time it was OK for us.

When I first moved to Limoux 71/2 years ago this was an excellent place to eat being Michelin listed along with the Moderne et Pigeon. Four years ago it went through a bad patch but now it is getting close to it's former glory. It offers excellent meals which match the Tontine Tonton but the price is more competive with the wine inclusive to the meal. Nice friendly staff and management and if you are there for Christmas book Christmas Day there you will not be dissapointed. Glad it has put the bad patch behind it.
