This is clearly the best restaurant in town. We were staying at Village de Santo, and had dinner there 5 times. The menu is diverse, with some Chef's specials almost every day. The service is perfect, especially in Vanuatu when things can get slow (island time :)), even when they had tables of 20 people.

The food is superb, especially the santo beef.

We stayed at Village de Santo in late January and ate at Restaurant 1606 every night - every single meal was absolutely delicious... The daily specials were amazing and a nice change each day, we especially loved the Seafood Paella, Pasta night, the garlic prawns and the chocolate mousse! The night time entertainment was very fun and we loved that Rose could remember all of our names by the time that we left.... :) Delicious food with friendly service, highly recommended.

You do not expect to eat like that on this island at the end of the world map. Be ready not to loose weight !

Excellent food that blends local ingredients and cuisine with mediterranean preparations in a relaxed environment. A must!

We recently stayed at Village de Santo, in late January. It was our second day in Santo, and it was raining cats and dogs. So we decided to stay in and have dinner at the Resort's restaurant, Restaurant 1606. It was a Wednesday night, Music Night, where you are encouraged to bring your musical talents. There was one ni-Van boy who was playing an acoustic guitar, and Bev broke out the shakers and drum, and we attempted to participate. There was another family staying there as well, and they were very talented. The father played the harmonica and the son played the guitar. They ended up doing a few songs that reminded me of tango music. We ordered the seafood paella, and I was completely unprepared for the beautiful and tasty dish they placed in front of us. It had green lip mussels, scallops, coconut crab, local and NZ prawns, and fish. It was so delicious, and we would have ordered another one if we hadn't had so many appetizers.

The next day, we decided to have lunch at the Restaurant. I decided to have a burger, and see how it stood up against the burger I had in town when we first arrived. The burger was BEAUTIFUL! It was a patty with carrots and sweet onions, but they made a point to let the patty rest before serving it, which makes a major difference. It was so juicy and savory. I really couldn't believe how well balanced the seasoning was. I should have had two of them instead of one with a side order of hot chips.

With two good meals so far, we decided to have our last dinner at the Resort. We decided to try to meat version of the paella. It was very tasty with Santo beef, sausage, and bacon. We also had some dessert, and it was a great way to finish the meal and stay.

Even if we weren't staying at the Resort, we would easily make the trek from town to Restaurant 1606 for the great food.

We would always see Nabil or Bev at some point during the day, and they would always have a moment to chat or ask how everything was going.

We also want to take a moment and thank Charlie, the Executive Chef at Restaurant 1606. You and your team work wonders, and we can't wait to come back and try the rest of the menu. Hopefully the sardine pate will be available!

David, thank you for keeping an eye on us during our last two meals.

Barry makes the best fresh lime juice!!

Rose, you really noticed the small things. Even asking if we needed anything. Thank you for your attentiveness.
