I been here several times, most of them, due my customers want to try an argentinian cut (and pricey), but...
as I mention this place apply the quote: " your reputation can give you a nation",

As soon as you get in the hostes is kind of rude, since they have a bunch of people and almost response: "if you want to wait or you can go anywhere else", between 14:00 and 16:00 is packed, most of the time for tourist and first time customers.

Waiters are ok,maybe is the best of the restaurant, service most of the time is nice, my partners was a bostonian fellow and a texas guy, so both of them knows about cuts and good meal;
Service is somehow slow, drinks are on time and good enough.

Most of the time they recommend you the most expensive dish or wine, so do not accept, they have no sommelier (or in 10+ times I never saw a real one).
Cuts are average, not that good not that bad, but , price-performance is overpricey.

Ambiance is nice, I liked it, they have a smoking area in the back, and in the front is nice the place.

Now, if you are novice or have no idea about cuts, go ahead and try it! will be enough for you, but if you have some idea, try other place, will cost maybe less o will be better with the meals.

Salads are not even good, and I tried almost all of them.

Be aware, read the menu, choose you election, do not ask the waiter or the captain, both will recommend the expensive of all;

Regarding the cuts, they have different idea about what medium,medium-rare ,english , or well done means;
but if the case, ask for the undercook one, I mean, want a medium well? ask for a medium, for sure they will miss the cooking; they use wood (smooking) to grill the beef...
And if you claim either the waiter or captain they won´t change the dish and will make you clear you have no idea about cooking....

Most of the Mexico city south taxis takes you there if you are a tourist, so, maybe they get a tip to get you there (my guess), so, average and pricey food, service is not good; but most of the wannabes want to go there...

The meat is good. But overpriced. Otherwise, a typical Argentine restaurant, though Cambalache is a little more stuffy than most. I prefer a more relaxed Argentine restaurant.

I am a meat lover so I've had my share of steakhouses and churrasquerias. This was not the first time I visited Cambalache, but i will be the last. We had lunch here with my parents (so 4 adults + 2 small kids) and with limited alcohol (couple of beers + couple of vodkas) and only 2 steak cuts (1.2 kgs) the tally was $300 USD. The quality of the food including the meat is very good, but it was undercooked despite the fact that we asked for it medium-well. The service is good relative to the prices. The restroom had a faulty door and a faulty WC, something you would never expect of a restaurant that charges these prices. Look, you will eat well here, but there are other several options for great steak at half the price.
