My husband and I were in Merida as part of a trip we took around Chiapas and the Yucatan Peninsula. When we arrived at Rosas & Xocolate, our one regret was that we only had two nights there! It is an absolutely charming hotel, beautifully created from two original mansions. Every attention to detail has been given. Much in the hotel has been carefully chosen to fit the Roses and chocolate theme - pink and brown upholstery in the dining rooms, accents in the rooms, etc...
There is an indoor restaurant and a lovely outdoor courtyard restaurant open to the skies along with an upstairs bar that looked to be extremely popular with the locals although we didn't visit it. The food was excellent - after having dinner in the courtyard the first night, we chose to stay the next night as well. There seemed no need to go out! Breakfasts were generous and delicious.
We had the Rosas suite which is beautiful (the bathrooms are particularly spectacular with an outside tub). Its only downside is that it is on the front of the hotel which is on a busy street and the noises of the city are difficult to block out. This however, is a product of the convenience of the location and the charm of its having been created from restored original mansions. The room opens onto a large balcony from which one has a beautiful view of the main boulevard through the trees.
The owner was on site a good deal of the time - very happy to talk about his hotel and its creation and to share stories. He is an interesting man who has created a beautiful haven in which to spend time. We had little opportunity to enjoy the amenities of the hotel as we had a guide during the day, so we can't speak for the spa, but the pool is beautiful - a serene setting visible from various parts of the hotel. It is unlikely that we will return to Merida, but the thought of another stay in this hotel might be enough to draw us back.
